Ingredients
2oz Caster Sugar
6oz Plain Flour
4oz Butter/Margarine
Method
Pre-heat the over to Gas Mark 5. Beat the sugar and butter together. Next stir the flour in to form a smooth paste. Sprinkle some flour on a clean work surface and rolling pin. Place the paste on the work surface and roll until the paste is about 1cm thick. Cut into shapes and place on a greased baking tray. Bake for 15-20 minutes until they look pale golden. When baked remove from oven and allow to cool on a wire rack.

Swiss Roll
Ingredients
3 Eggs
4oz Caster Sugar
4oz Self Raising Flour
2 Tablespoons Boiling Water

Method
Pre-heat the oven to Gas Mark 7. Whisk the eggs and sugar together and then add the flour, folding into the mixture. When all the flour has been added line a swiss roll tin with grease proof paper and the mixture. Bake in the oven for 8-10 minutes. Place some greaseproof paper on a worktop and sprinkle some caster sugar on it. Place the sponge on the sugar and remove the lining paper. Trim the edges of the sponge and add then spoon the jam onto the sponge and spread out, leaving a little border of clean sponge all around. Too much jam will result in it all oozing out when you roll up. Roll the sponge up and leave to cool with the seam face down.

Pizza Base - makes 3 x 11" pizza bases.
Ingredients
500grams Strong Flour
4 Tablespoons Vegetable Oil
1 Teaspoon Salt
250ml Tepid Water
2 Teaspoons Yeast
½ Teaspoon Sugar
Method
Add the flour, salt, oil, yeast and sugar to a mixing bowl and mix. Make a well in the middle of the ingredients and pour the water in. Mix with a spoon until the a dough is formed. Knead with your hands for 10 minutes then cover with a damp tea towel and leave for an hour to allow the yeast to work. When the dough has doubled in size sprinkle some flour onto a clean work surface and rolling pin. Split the dough into 3 equal size balls. Roll the doughball out to between 0.5cm - 1cm thick depending on how thick you like your base.
Pizza Sauce
Ingredients
1 Onion
1 Garlic Clove
400grams Tinned Tomatoes
1 Tablespoon basil
2 Tablespoons Oregano
½ Teaspoon Salt
1 Teaspoon Pepper/Paprika
Tomato Puree
Method
Chop up the onion and garlic and fry for about 5 minutes until soft. Add the tinned tomatoes, tomato puree, mixed herbs, salt & pepper. Allow to simmer for 15-20 minutes until the contents have reduced. To make smoother give it a blast in a blender for a few seconds.
Making The Pizza
Ingredients
Pizza Base
Pizza Sauce
Grated Mozarella Cheese (Cheddar or Red Leicester work as alternatives or try mixing your cheeses)
Optional Toppings - Ham, Pepperoni, Sweetcorn, Chilli, Mushrooms
Method
Smear the sauce evenly on to the pizza base. Sprinkle the grated cheese over the sauce and add any other toppings you like. Place in a pre-heated oven for about 15-20 mins on Gas Mark 6.

2oz Margarine
3 Fluid oz Milk
Method
Pre-heat the oven to Gas Mark 7. Rinse the fruit under the tap. Mix the flour and sugar together and then add the fruit and margarine. Mix until you the margarine has combined with the other ingredients. Add half the milk and mix the ingredients. The mixture will start to stick together. Add more milk until the mixture is in a dough but don't let the mixture get too wet. Use your hands to mix/knead the mixture when it gets into a ball. Leave the dough to cool in the fridge for about 15 mins.
Sprinkle some flour onto a clean work surface and your rolling pin. Roll out the mixture to until it is about 2cm thick. Use a cutter or knife to cut out rounds and place on a greased baking tray. Brush the tops of the scones with milk and bake for about 15 minutes on Gas Mark 7. When done allow to cool on a wire rack before enjoying with butter, jam and cream.
